Date and Walnut Millet Ice Cream By Chef Aditya Nair

Ingredients:

  • Pearl millet powder – 30 g
  • Water – 300 ml
  • Milk – 500 ml
  • Dates (pitted and soaked in milk) – 250 g
  • Walnuts (toasted and chopped) – 250 g

Method:

  1. Mix the pearl millet powder with water to form a slurry.

  2. Warm milk and add in the millet slurry.

  3. Cook on a low flame whisking continuously until it thickens to a smooth custard consistency.

  4. Pass the mixture through a sieve to remove any lumps and grit.

  5. Puree the soaked dates and add to the millet custard base. Add in the toasted and chopped walnuts, reserving some to garnish the top with.

  6. Transfer the ice cream mix to a dish with a well-fitting lid. Top with reserved walnuts, surface wrap, close the lid tightly and freeze overnight.

Pearl millet flour is used as a fat replacer in millet ice cream
