The power of #Sorghum 🙌🌾 Chef Claude @chef_bigayim recounts his experience visiting @kwezacraftbrewery in #Kigali 🇷🇼 with fellow chef colleague @chefphiston and more!
“It was incredibly enlightening and wonderful to see a brewery operation centered around an indigenous crop ...like #sorghum.
This brewery serve multiple important functions - preserving cultural brewing traditions, creating economic opportunities, and highlighting the versatility of traditional grains.
We had a discussion with Jessie Flynn the owner of the brewery about Sorghum distillery residue’s (SDR) potential for maternal nutrition which represents an exciting intersection of traditional knowledge, #culinary innovation, and public #health.
This approach creates a beautiful #circulareconomy - the brewery produces a cultural product (sorghum beer) while generating a nutritious byproduct that can address specific community health needs.
We promised ourselves that in the near future as chefs of the community, we will develop some specifics recipes making SDR more palatable and accessible to new mothers.”👏
