Black bean and chocolate orange energy balls By Sally Haines (RNutr)

Ingredients:

  • 1 tin (400g) black beans, drain and rinse (220g black beans)
  • 50g rolled oats
  • 2 tbsp cocoa powder
  • 2 tbsp almond butter (or any nut/seed butter)
  • Zest of 1 orange
  • Juice of 1 orange
  • 2 tbsp honey or maple syrup (adjust to taste)
  • 1/2 tsp vanilla extract
  • 2 tbsp dark chocolate chips (optional)
  • Desiccated coconut/cocoa for coating (optional)

Method:

  1. In a food processor, combine the drained and rinsed black beans, rolled oats, cocoa powder, almond butter, orange zest, orange juice, honey or maple syrup and vanilla extract.

  2. Blend the ingredients until you have a smooth and well-combined mixture. You may need to scrape down the sides of the food processor a few times to ensure everything is evenly mixed.

  3. If you're using chocolate chips, fold them into the mixture.

  4. Place the mixture into the fridge for a few hours or overnight to become firm.

  5. Use your hands to shape the mixture into small energy balls. You can make them any size you prefer. Roll the energy balls in the desiccated coconut or cocoa (if using) to evenly coat them.

  6. Your black bean and orange chocolate energy balls are ready to enjoy!
