A great, easy recipe to cook for and with your kids!

From Kids In Nutrition (KIN) – a student-led movement dedicated to enhancing food equity, promoting sustainable systems, and improving health outcomes for youth and families through food literacy and access.

Ingredients:

  • ½ can of white northern or navy beans
  • 1 ripe avocado
  • Whole grain bread
  • Splash of lemon juice
  • Sliced tomato
  • Basil leaves
  • Everything bagel seasoning (optional)

Method:

  1. With a fork, mash together beans, avocado, and lemon juice.

  2. Toast your whole grain bread (I like whole wheat sourdough)

  3. Top with tomatoes, basil, and a dash of everything bagel seasoning.
