On Thursday 22 February a group of chefs and restauranteurs travelled to 365 Kitchen Tales Farm, north of Delhi. Arriving at a 1 acre oasis, the group gathered to learn from Surabhi Bhandari her vision for the farm, how it came to be, and its purpose. A space with all organic produce, the farm aims to educate guests about local, seasonal produce and promote healthy, sustainable cooking. Walking around the farm, chefs tasted produce picked directly from the vines, stalks and pods: fresh peas, herbs galore, spring onions, purple and white cauliflower… so much goodness growing in healthy, fertile soil.

A purpose built, outdoor fire-fed kitchen was the scene for much of the day’s action, together with the outdoor seating area where guests came together to devour a sumptuous meal. Cooked over the fire were multiple dishes including:

*BAKED POTATOES with ghar ka makhan and silbatte ki chutney

*KHAPLI PARATHAS with mirchi kuta

*SPRING ONION and tomato sabji with a mix bean salad

*Ragi and Jaggery Halwa

The conversation was relaxed, inspiring and intimate, as chefs shared about their passions for the local food industry, and the challenges they face in their kitchens. Many thanks to Surabhi and her team, for such a beautiful, relaxing and ‘fresh-air’ filled day. Grass and healthy soil was the perfect way to head towards the weekend!
