African Bean Balls By Chef Siphiwe Sithole
Cow peas are high in dietary fibre while being low in calories. They are rich in protein, iron and magnesium. They promote digestive health and overall wellness.
Ingredients:
- 250g Cow Peas/Black Eye Peas
- 15g Salt
- 100g Brown or Red Onion
- 100g Peppers (Green/Red/Yellow)
- 1Tbsp Curry Powder or Preferred Spice
- 50g Cassava Flour or Chick Pea Flour
- 1 tsp Garlic Paste (optional)
- 250ml Coconut Oil (for frying)
Method:
Soak beans for 2 hours and then boil them in salted water until soft.
Drain water from beans and leave to cool down.
Finely chop onion and peppers.
Blend or mesh the beans into a thick mash/paste.
Mix together the beans, onion, pepper, curry powder/spice and flour. The mixture must be thick enough to make balls, if too wet add more flour.
Make small sized balls from the bean mixture.
Heat the coconut oil in a deep frying pan.
Fry bean balls evenly until well cooked. Do not let the whole ball to be covered in oil as it will split it. The oil should cover half the bean ball at a time.
Serve them with a sweet chilli sauce or any other sauce of your choice.
