Hi i’m Chef Maya of the black Roux Culinary Collective and I’d live to highlight a west African street food made with black eyed peas – it’s a simple vegan friendly Bean fritter. Enjoy!

Ingredients:

  • 1 cup black eyed peas soaked over night
  • 1 sweet onion
  • 1/2 Scotch bonnet pepper
  • 1 cup water or vegatable stock
  • 1 tablespoon kosher course salt
  • 1 cup chickpea flour
  • 1 teaspoon baking powder
  • 3 cups oil for frying

Method:

  1. Soak beans then drain.

  2. Blend in a blender with onion, pepper, and salt, using the liquid to achieve a smooth consistency.

  3. Place in a large bowl and whisk in flour and baking powder.

  4. Drop using a spoon into hot oil and fry for about 7 minutes.

  5. Enjoy hot... I serve mine with Shito.. a west African hot sauce!

The beans need to soak over night then they are blended with the onion salt and pepper using the liquid to get a smooth consistency.
In my personal recipe I add a little chickpea flour and a touch of baking powder to get a light and fluffy fritter thats has a delicate yet hearty crisp on the outside.
