Hi i’m Chef Maya of the black Roux Culinary Collective and I’d live to highlight a west African street food made with black eyed peas – it’s a simple vegan friendly Bean fritter. Enjoy!
Ingredients:
- 1 cup black eyed peas soaked over night
- 1 sweet onion
- 1/2 Scotch bonnet pepper
- 1 cup water or vegatable stock
- 1 tablespoon kosher course salt
- 1 cup chickpea flour
- 1 teaspoon baking powder
- 3 cups oil for frying
Method:
Soak beans then drain.
Blend in a blender with onion, pepper, and salt, using the liquid to achieve a smooth consistency.
Place in a large bowl and whisk in flour and baking powder.
Drop using a spoon into hot oil and fry for about 7 minutes.
Enjoy hot... I serve mine with Shito.. a west African hot sauce!
