Ethiopian Kinche | Cracked Barley Porridge By Chef Odi Gowa Omotto
Kinche is a traditional Ethiopian breakfast dish made from cracked grains. Deeply rooted in the country’s agrarian culture, it’s a simple, nutritious, and accessible meal, reflecting the importance of grains in Ethiopian cuisine.
Ingredients:
- 200g cracked barley
- 700mL water
- .05kg salt
- 5mL olive oil
- 50g green chili
- .05kg coriander
Method:
Bring the water to a boil.
Once the water is boiling, add the cracked barley and the salt.
Stir until well mixed. Lower the heat and cover. Let simmer for about 15-20 minutes, or until the grains have absorbed all the water and are tender. Still occasionally.
Remove from heat and divide into individual bowls.
Top with olive oil, onion, green chili and coriander, and enjoy!
