Nutritious Peanut Butter Porridge By Clara Kapelembe Bwali
A nourishing and much-loved porridge with groundnuts, this time with a twist—fruit!

Ingredients:
- 2 cups maize meal
- 1 cup pounded groundnuts
- 1 tablespoon peanut butter
- 1 tablespoon cashew nut butter (optional)
- ¼ cup strawberries, mulberries, and blueberries
- ¼ cup toasted cashew nuts or peanuts
- 2 tablespoons sugar or honey
- Pinch of salt
Method:
Wash the strawberries, blueberries and mulberries. Toast the cashew nuts or peanuts.
Add maize meal, salt, sugar, pounded groundnuts and a pot, add water to make a paste then pour in hot water.
Mix until mixture is combined and starts to boil. Cook for 30 minutes then add peanut and cashew butter. Simmer for 10 more minutes.Mix until mixture is combined and starts to boil.

Simmer for 10 more minutes.
Top with fruit and drizzle with honey (optional).
