Pumpkin leaves morogo By Chef Mokgadi Itsweng

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 garlic clove, finely grated
  • 1 red pepper, diced
  • 500g pumpkin leaves, washed and finely sliced
  • Salt and pepper to taste

Method:

  1. Heat oil in a pan and fry onion, garlic and red pepper together for 5 minutes over medium heat

  2. Add the pumpkin leaves and stir fry them into the pepper mixture, add vegetable stock and cook closed for 10 minutes, adding more water if it dries out.

  3. Taste the morogo and season with salt and pepper if needed.
