Bean Pilaf By Chef Nic Odhiambo
Ingredients:
- Rice - 5 kgs
- Beans - 5 kgs
- Cloves – 2 tablespoon
- Onions – 2 kgs
- Tomatoes – 2 kg
- Garlic – 5 bulbs
- Ginger – 3 thumb
- Carrots – 2 kgs
- Turmeric – 2 tablespoons
- Salt – 3 tablespoons
- Cumin – 2 tablespoons
- Paprika – 2 tablespoon
- Cardamom – 2 tablespoons
- Black pepper - 1 tablespoon
Method:
Wash and boil the beans; add the salt into the beans.
Chop, dice and mince the onions, tomatoes, garlic, ginger and carrots.
Pour all the onions into a large pot and let cook until caramelized.
Pour the tomatoes, garlic, ginger and carrots; cook until soft and tender. 6.5.Pour in all the masala ingredients (turmeric, cumin, paprika, cardamom, black pepper and cloves)
Mix and stir until well combined. Add water sparingly to deglaze the bottom of the pot.
Add in all your beans, stirring and mixing well then bring to a simmer.
Pour in all the rice, mix gently until well combined.
Add enough water until it covers the rice and beans mixture.
Cover to cook, checking from time to time to avoid burning.
Serve with a side of salsa and tamarind source.
