Zero Waste Carrot Cake By Chef Joy Iyokere

Ingredients:

  • 1 and 1/4cup flour
  • 1 cup of sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 100g apple sauces
  • 3/4 cup of carrot oil
  • 1 tsp cinnamon
  • 3/4 grated carrot (from the carrot oil)
  • 1/4 cup wet desiccated coconut (after getting the coconut milk)
  • 1/2 cup coconut buttermilk

Method:

  1. Grate the carrot, add it to 3/4 cup of oil to 3/4 cup of grated carrot. Then blend the coconut to extract the coconut milk, measure 1/2 cup and add 1/2 tbs of white vinegar to make the coconut buttermilk.

  2. Measure the dry ingredients which are flour, baking soda, salt and cinnamon together in one bowl.

  3. Whisk sugar and apple sauce together, add up the carrot oil the coconut buttermilk, the grated carrot from the carrot oil, and wet desiccated coconut from the coconut milk, then fold in the dried ingredients together. Then bake for 20mins to 25mins for temperature of 175degree.
